In most of Ben’s experiences the humble Southern chefs share their long protected family recipes, but it’s not an adventure if everyone cooperates. Some of these institutions guard their recipes like members of the family. To the untrained eater, the secret ingredients it takes to create such an iconic dish would remain a bewitching mystery without the original formula. However, Ben’s journey and mission is to deliver the most amazing 100 Southern recipes. With his charm and ability in the kitchen, Ben acquired each recipe–one way or another. If he was unable to get the recipe directly from the source, Ben replicated it himself, only having tasted the dish. After deciphering the exact mix of ingredients, Ben’s recipe was put to the test when the recipe gatekeeper gave him the thumbs up.

From iconic Southern kitchens all throughout the Delta—such as Mat & Naddies and Carlos and Rocky’s in New Orleans; Our Way Café in Decatur, Georgia; McMel’s, City Café, Dipsy Doodle, and Wendell Smith’s Restaurant in Tennessee; and Martha’s Menu in Mississippi—experience the real recipes, real people, and real stories as Ben journeys through the South exploring Southern Routes.

Southern Routes: Secret Recipes from the Best Down-Home Joints in the South, by Ben Vaughn

Review "Ben Vaughn's new book "Southern Routes" is a joyous, soulful, informative ride through the most delicious parts of America.  Ben provides us with a combination of a (fun as hell) insider's access, time-honored recipe collector's keepsake and a 'jawbonin' journey' I'd love to take every summer of my life!"   Norman Van Aken - James Beard Who's Who in American Food & Beverage

From the Back Cover "Ben Vaughn who has all the right credentials is about to right a wrong- and in doing so will take you on a tasty journey and food adventure you never expected or possible even knew! In New York, Los Angeles and here in Las Vegas we sit pretentiously at our star chef dining tables and revel in the frou frou of expensive food, serving gimmicks, and yes even oddball culinary items we probably shouldn't be eating in the first place. Eating has been turned into an awkward art form and regular diners have turned into foodies in ecstasy over the strangest of plates- a floating sashimi biscuit comes to mind!  It's become fashionable to stand around the office water fountain and extol the latest micro bean or newest of kale leaves that come with a magnifying glass so you can see it. Let alone pierce it with one of the fork's fingers! In our bid to be "food insiders" and "food aficionados" we've lost sight of the basics. That's a crime because it's where good food came from that we should be honoring. Ben has discovered that America's best kept food secrets are really down in the south where family is an integral part of food history: recipes handed down from generation to generation; produce picked from farm to table within hours and lovingly prepared as only a grandmother could do. This is about getting back to the basics yet simultaneously enjoying the robust mixed in with secrets to provide the ultimate comfort at the dining table.  Southern Routes is a fascinating and adventurous food journey that rights the wrong that good, nay great food is only to be found in NY LA or Las Vegas!  Read, savor, learn, cook and enjoy some of the best meals you'll ever eat anywhere!" Robin Leach of "Lifestyles of the Rich & Famous" fame has been a journalist for more than 50 years

Curry The sub-title of this book, "Secret Recipes from the Best Down-Home Joints in the South", is a gross exaggeration, if not a total misrepresentation.Looking through the book, recipe after recipe is Ben Vaughn's idea of what the real recipe is. Only a few of the recipes come directly from the "down-home joints" themselves. And the amateurish writing of the introduction to the recipes leaves this book all but unreadable. Save your money.

By Amazon Review As someone who likes to travel around my town and area looking for a great bite to eat, Southern Routes is right in my lane. I'm always looking for places that are off the beaten path, or hidden places that someone local told me to try. I'd be lying if this book didn't have me thinking about a couple side stops on my next trip to the south. The book is filled with real stories about real people, which makes the experience more personal and approachable. In a food world where everyone seems to be obsessed with famous chefs and their public exploits, Southern Routes "keeps it real." And because the content moves across 100 different restaurants, it's easy to get in and out of without feeling like I have to go back and pickup where I left off.As a cookbook, I LOVE the idea of "secret" recipes. Mostly not because it's a secret, but more because these are the recipes that people have been using for decades. Secrets are pretty cool too though. I'm not an advanced cook by any stretch of the imagination. I shy away from recipes that have a high difficulty level. So far, I've tried out a couple recipes from the book and they're really great! Most of the recipes consisted of foods I already buy at the grocery and/or had on hand in my refrigerator. They were easy to reproduce, and I think I did a pretty good job with the two I made.In all, I took a shot at this book based on a recommendation from a friend. I couldn't be happier and highly recommend it. I'll probably pay it forward and buy a copy for my mom. The pictures are pretty, I breezed through the book in a couple days, now I'm going to keep it in my kitchen as a quick recipe reference. Five stars all the way.

In most of his recipes he can't get the original secret ingredients, so he gives you his own take on the recipe, using similar ingredients. The title explains it all, the recipes are so exclusive it remains a SECRET! Since I already know how to make biscuits and similar items that a true cook already knows how to do or can look up an updated web site for help, this book was a waste of money!
